ok this is a thread ment to us who loves to cook, first one is simple
300g of cooked pasta
400g minced meat, cook it on pan until brown
600g of veggies not frozen
260g of grated cheese
500g of crushed tomatoes
mix everything (leave some cheese) up into powl the same powl you but into oven. but the rest of cheese as topping.
stick it to the oven...about 220C for 20min... take it out of the oven, let it settle for a 10-15 minutes...and eat it |

Chocolate ice cream (parfait ice (cream))
6 egg yolks (past.) - 120 ml
125 g sugar
1 tsp vanilla sugar (or ½ vanilla pod)
100 g dark chocolate (at least 50% cocoa)
½ liter double cream
--------------
1. Melt the chocolate at low heat with bain marie or similar
2. Whip the eggs and sugar until white and airy (6-8 mins)
3. Add the vanilla to the egg mixture and give it a quick stir
4. Whip the cream
5. When the chocolate has melted, set it aside for a few mins to cool a bit
6. Pour the eggs into the chocolate and carfully fold it until it's a homogeneous mass
7. Add the whipped cream and fold it again. The more careful you are doing this the less air will run out and the more smooth final result
8. Put it in the freezer for at least 12 hours and voila! Heavenly ice cream awaits
NOTE: Instead of chocolate flavour, try:
Vanilla ice cream: Double the amount of vanilla
Orange: Squeeze the juice from an orange and grate the rind
Strawberry: 400 g of frozen strawberries, mash or blend them lightly
Caramel (hard nougat): 50 g almonds, 125 g sugar, ½ tsp baking soda
Chop the almonds finely and melt the sugar in a hot pan. When it's melted add the almonds and soda and stir quickly. Pour it onto baking sheet/paper (silicon) and leave it to cool completely. Because of the soda, the caramel should be easy to break apart, either by hand or using a rolling pin (simply roll over the caramel and it will crack quickly).

My Mothers Cheesecake Recipe
2 cups graham wafer crumbs
1/2 cup margarine or butter
1 tsp. cinnamon
1 250g package of cream cheese
1 pkg Dream whip topping mix
1/2 cup milk
Fruit pie filling( for on top)
1 cup icing sugar
Melt margarine and mix with crumbs and cinnamon. Press into bottom of a 9"x13" pan. Bake at 350F for 10 minutes. Let cool. Beat package of dream whip with milk as directed. Add cream cheese and icing sugar, beat until smooth. Spread on cooed crust. Allow to sit in refrigerator for at least 1 hour prior to spreading pie filling over top.

Pizza, pizza, PIZZA!!!
The dough
3½ dl water
Max. 5 g yeast (we used just 50 grams for 25 kg dough!)
1 tsp salt
2 tsp sugar
1 dl oil (what type aint that important)
100 g durum flour
About 525 g wheat flour
-------------
1. Dissolve the yeast in the water
2. Add salt, sugar, oil and durum flour and mix until free of any lumps
3. Add the wheat flour little by little and keep mixing untill the dough has
a firm, but elastic consistency
4. Leave the dough a cool place 2-3 hours covered. Plastic film is preferred as it keeps the dough from drying out
5. Cut the dough into pieces of 250g each and roll them into balls (for a 25-30 cm diameter pizza)
6. Set the dough balls aside and let them rest for about 1 hour, again covered with film
7. Roll out a dough ball to the desired size and cover it with what you like
8. Bake the pizza at 240°C (460°F) for 10-12 minutes

Chocolate mousse in light and dark
A real delight to the eye - and taste buds!
6 past. egg yolks (120 ml)
100 g sugar (1)
3 past. egg whites (100 ml)
50 g sugar (2)
½ liter double cream
100 g light chocolate
100 g dark chocolate (at least 50% cocoa)
----------------
1. Slowly melt the two types of chocolate separately with bain marie or similar
2. Whip the yolks with the sugar (1) until white and airy, about 6-8 mins
3. Whip the egg whites until they are white and you can turn the bowl upside down. Then add the sugar (2) and give it a good whip until the white becomes tough
4. Whip the cream
5. When the chocolate is melted, take one off the heat and leave it for a few mins to cool a bit
6. Carefully fold half the whipped egg yolks in the chocolate
7. When it's a homogeneous mass fold half the egg whites in and lastly half the whipped cream
As with the ice cream I cannot emphasize the importance of how careful you must be when folding the different things together. You can easily "push" air out of the mousse and it will collapse.
8. Step 5 to 7 is repeated for the other chocolate type
Both mousses are placed at a cool place for at least 12 hours to get the right consistency.
A big spoonful of each mousse is placed across each other in sherbet glasses and you can decorate it with some whipped cream, lemon balm, grated chocolate (white on the dark mousse and dark on the white mousse for maximized visual effect) or whatever you like.

In this heat, I can't think of anything better than this drink - the Danish national summer drink.
Koldskål (directly translated it means Cold-bowl)
1 liter buttermilk
2 dl creme fraiche
3-4 tbsp sugar
2 tsp vanilla sugar (or a few drops of vanilla essence)
2 past. eggs
1 tbsp squeezed lemon juice
All ingredients are stirred or blended together and the drink is served cold.
Comes in nearly unlimited variations with fruit added (strawberry, raspberry, lemon, peach, pineapple, banana etc.) |

This is a filling comfort dish.
couple large garlic cloves
can of sardines (canned tuna if you need a substitute)
ripe tomato
two slices of cracked wheat bread(or any preferred variety of bread)
fish sauce
malt vinegar
extra virgin olive oil
sharp cheddar slice (non of that fake plastic American shit)
mayonnaise (no Miracle Whip)
Maille Dijon mustard
garlic powder
pepper
salt Toast the bread.
Mustard one side, mayo on the other.
On the mustard side, drizzle olive oil on it.
Get lots of fish sauce and vinegar on the mayo side, then press the garlic on top and spread it out.
Cheese.
Tomato slices.
Sprinkle on the pepper, salt, and garlic powder.
All you need is the fish and you should be done.
If you need more filler, add some artichoke hearts or more garlic cloves.
If you want something more to sink your teeth into, add some lettuce and red onion slices.
edit: Actually spinach or such, might be better than lettuce. _________________ I have come here to chew bubblegum and kick ass... and I'm all out of bubblegum. |
